Day 2, ABCs of Gratitude: Beets!


I'm delighted to talk about my B-Gratitude today: the mighty beet!

I can't recall the precise moment my love for beets emerged, but I know my life hasn't been the same since. Any beet lover can attest to the uniquely rustic flavor and the gratifying "chomp-factor" you get from each bite.

Not only do beets have the most naturally-beautiful color, they are packed with nutritional value. According to a NY Times article (link below), roasted beets are high in folate (a big player in women's health), manganese, and potassium (a crucial mineral to a well-functioning body).

Of course, the title of this blog suggests I am grateful for beets in other ways too; and it wouldn't seem right to talk about them without a shout-out to the 'Beet is Beautiful' philosophy. 'Beet' is about finding beauty in every shape, size, and color. A raw beet is rough on the outside, a little dirty at times, and it's also got an awkwardly-long stem of greens. At face value, it's a bit of a mess! But if you work with a beet--take the time to clean it off, let it roast, and find a way to incorporate those awkard stems into a gorgeous dish, you'll find that beets truly are one of the most beautiful and versatile vegetables around.
